Quinoa with Green Chard

Quinoa has been gaining popularity over the last few years. It is rich in vitamin B, folate and minerals. I like its nutty taste, and interchange quinoa and rice in my recipes. Remember to rinse quinoa with cold water before cooking, to remove the bitter-tasting coating.

Quinoa with greens and smoked salmon

For a gluten-free pescetarian friendly meal, I made some quinoa with green chard, and topped it with some smoked salmon.

Quinoa with Green Chard

Ingredients:

  • 1 cup of quinoa, rinse thoroughly in cold water
  • 2 cups of broth
  • 1 bunch of green chard, chopped
  • 1 onion

Steps:

  1. Sweat onion for 5 minutes.
  2. Add in quinoa and broth.
  3. Simmer for 12 minutes.
  4. Add in green chard. Simmer for another 2-3 minutes.
