Quinoa with Green Chard

Quinoa has been gaining popularity over the last few years. It is rich in vitamin B, folate and minerals. I like its nutty taste, and interchange quinoa and rice in my recipes. Remember to rinse quinoa with cold water before cooking, to remove the bitter-tasting coating.
For a gluten-free pescetarian friendly meal, I made some quinoa with green chard, and topped it with some smoked salmon.
Quinoa with Green Chard
Ingredients:
- 1 cup of quinoa, rinse thoroughly in cold water
- 2 cups of broth
- 1 bunch of green chard, chopped
- 1 onion
Steps:
- Sweat onion for 5 minutes.
- Add in quinoa and broth.
- Simmer for 12 minutes.
- Add in green chard. Simmer for another 2-3 minutes.
