Indian Beef Curry with Butternut Squash Recipe

During a recent visit to my favorite spice shop, Penzey’s, I picked up some Hot Curry powder and Garam Masala. The Hot Curry powder is a mix of aromatic spices such as turmeric, cayenne pepper, coriander, ginger, cumin, fenugreek, etc.

Here is a quick and easy Indian beef curry recipe with butternut squash. Enjoy!

Indian Beef Curry with Butternut Squash Recipe

Ingredients:

  • 1 lb grass-fed ground beef
  • 2 tsps Penzey’s Hot Curry
  • 1 tsp Garam Masala
  • 3 cups butternut squash, cubed
  • 1 can coconut milk
  • Salt
  • Pepper

Steps:

  1. Dry toast spices for 1 minute in pan. Set aside.
  2. Brown grass-fed ground beef in pan over medium high heat.
  3. Add coconut milk and spices to beef.
  4. Add butternut squash and simmer for 15 minutes.
  5. Season with salt and pepper to taste. Enjoy!
