Indian Beef Curry with Butternut Squash Recipe

During a recent visit to my favorite spice shop, Penzey’s, I picked up some Hot Curry powder and Garam Masala. The Hot Curry powder is a mix of aromatic spices such as turmeric, cayenne pepper, coriander, ginger, cumin, fenugreek, etc.
Here is a quick and easy Indian beef curry recipe with butternut squash. Enjoy!
Indian Beef Curry with Butternut Squash Recipe
Ingredients:
- 1 lb grass-fed ground beef
- 2 tsps Penzey’s Hot Curry
- 1 tsp Garam Masala
- 3 cups butternut squash, cubed
- 1 can coconut milk
- Salt
- Pepper
Steps:
- Dry toast spices for 1 minute in pan. Set aside.
- Brown grass-fed ground beef in pan over medium high heat.
- Add coconut milk and spices to beef.
- Add butternut squash and simmer for 15 minutes.
- Season with salt and pepper to taste. Enjoy!
