Gluten-Free Dark Chocolate Cookie Recipe

I made some delicious dark chocolate cookies using the Raw Chocolate Paste from Navitas Naturals. These chocolate cookies are so rich and moist, and perfect with a cup of good hand poured coffee.
Gluten-free Dark Chocolate Cookie Recipe
Ingredients:
- 40 grams Navitas Raw Chocolate Paste
- 140 grams almond meal
- 28 grams unsalted butter, at room temperature
- 50 grams brown rice syrup
- 30 grams coconut flakes
- 1 tsp vanilla extract
- 1 large egg
Steps:
- Pre-heat oven to 350F.
- Mix all ingredients by hand.
- Spoon out 1 inch balls onto cookie sheet and flatten with a fork.
- Bake for 18-20 minutes or when the edges are golden brown.
- Cool for 2 minutes on the cookie sheet.
