Roasted Butternut Squash and Acorn Squash Recipe

We got some butternut squash and acorn squash from the local market. Roasting is a simple, yet delicious way of cooking winter squashes.
A great way to enjoy these squashes is with a simple salad with olives, heirloom tomatoes, pears, eggs and Parmesan cheese.
Roasted Butternut Squash and Acorn Squash Recipe
Ingredients:
- 1 butternut squash, remove seeds and cut into chunks.
- 1 acorn squash, remove seeds and cut into wedges.
- Olive oil
- Salt
- Black pepper
Steps:
- Preheat oven to 450F.
- Toss butternut squash and acorn squash with plenty of olive oil, salt and pepper.
- Place squash in a single layer on baking sheet.
- Roast for 35-40 minutes, turning half way through.
